Simple. Cool. Fresh.
Sounds like summer to me. Trying to be all healthy and really take advantage of what produce is the freshest in the summer time, I decided that I wanted to see what all the fuss was about and make my own cucumber salad. The reason why I like this cucumber salad is that it takes about 5 minutes to make and packs a nice little flavorful punch.
Slightly adapted from Simply Recipes
1 large cucumbers
2 tablespoons of olive oil
1 tablespoon apple cider vinegar
1 tablespoon sesame seeds
1/2 teaspoon red chili flakes
salt and pepper
1) Peel cucumber and cut it into quarters (lengthwise).
2) Toss in bowl with all the above ingredients.
3) Share and Enjoy.
4) Yes, it was that simple.
This is a perfect summer salad to bring to a summer bbq or as a nice side for lunch. I love the kick that the red chili pepper flakes give this salad 🙂
