Chocolate Mocha Buttercream Frosting

Got a coffee lover in your life? Is their birthday coming up? If not, do you just love them enough to bake them a cake in the middle of the week to show them how much you care? I hope so. I really hope so because cake is just so good and it will put a smile on anyone’s face…even those people who do not like sweets.

For BOOF Buddy Sho’s birthday, I was not going to arrive empty handed so I wanted to put some of my newly taught frosting making skills (thanks to my Aunt Tami, the cake queen!) to good use and what more than a perfect occasion than for Sho’s Birthday.

Buttercream is a simple little thing to whip up and this is a great little frosting to throw on a Duncan Hines/Betty Crocker/Pilsbury Box Mix (Chocolate probably tastes best) for a coffee-lover in your life.

1 Cup Confectioners Sugar

1 Cup Unsalted Butter (two sticks…usually)

3 tablespoons Instant Espresso Powder (Folgers has a good and pretty cheap one)

1 teaspoon vanilla

1/4 cup unsweetened cocoa powder

1) Beat butter on high in a stand mixer. Ad sugar.

2) When it begins to get nice and fluffy, add vanilla.

3) Then add both the espresso and cocoa powder. Continue to beat on high until the frosting is a nice fluffy and easily spreadable consistency.

4) Spread on previously cooled cake.

5) Share and Enjoy!

P.S. If you want more of a chocolately consistency, just increase your cocoa powder amount to either 1/3 or a 1/2 cup.

Go out and find a friend to make cake for. And then leave that store bought frosting behind, head home and whip up (pun intended) this little gem.  Sho enjoyed this for her birthday and had lots of cake. And I am sure she smiled which made me smile. Go share some smiles.
