This is one of those recipes that the good healthy parts should completely cancel out the not-so-good parts, and you should feel absolutely no guilt. Yes. However, if that were the case, we would be canceling out a lot of stuff in recipes while feeling little guiltless which would cause considerable problems down the road. So, we wont do that too often but I do think this is one time that we can get away with it.
Let’s be serious here that sometimes you just need some cheesiness in your life. Cheese isn’t bad for you but extensive amounts of it….can definitely be. And because cheese is just so delicious, you can quickly be in that “extensive” category with no recollection of how you got there. Trust me, I’ve been there. Not a pretty site.
Therefore, we limit our cheesy intake (and I am seriously craving cheese right now seeing that I have been without it for 24 days), but recipes like these make me feel not so bad about my occasional cheese choices. Is it February yet?
Adapted from Closet Cooking
1 cup quinoa, well rinsed
1 cup vegetable/chicken broth
1 cup water
2 cups broccoli, chopped
1 cup cheddar, shredded
salt and pepper to taste
1) Bring the quinoa, broth and water to boil over medium heat in a small pot. Reduce the heat simmer covered until the broth has been absorbed and the quinoa is tender,about 13-17 minutes.
2) Meanwhile in a medium sauce pan, steam broccoli with about 1/2 cup water over medium heat. Cover until broccoli is tender.
3) Remove broccoli from heat and drain. Mix in broccoli with quinoa.
4) Mix in the cheese, let it melt and season with salt and pepper.
5) Share and Enjoy!
Very simple and satisfying! I would also DEFINITELY consider mixing it up and substituting with some goat cheese or feta next time around. Nom.
