Carrot Cake Cookies with Cinnamon ProGlaze 06.27.13

Hey Friends!

Let me tell you about these cookies.  Well, let’s start by going in rewind for a minute.  I started making Carrot Cake cookies sometime towards the middle-end of last year and they were absolutely scrumptious.  I even started making Carrot Cake Cookie Sandwiches with a cream cheese filling. Yes, I know you are salivating right now.  However, since turning over my newly dedicated clean-eating leaf, I have been trying to determine how I would recreate these delicious cookies.

I made a batch of clean carrot cake cookies that came out pretty good a few months back, but I did not top them with anything and I really think that was the missing bite that it needed.  After being inspired by various fit friends on IG, I came up with the idea of just making a cinnamon pro-glaze.  Um. GRANDSLAM.

Ingredients

For the cookies 

1 1/4 cup oat flour

1 large egg

3/4 cup shredded carrot

1/ cup raisins

1/4 cup unsweetened almond milk

1/4 cup chopped walnuts

1 teaspoon baking powder

1 teaspoon baking soda

1 tablespoon ground cinnamon *** I love cinnamon but you could probably only put a teaspoon and be fine 🙂

1 teaspoon vanilla extract

1/4 cup xylitol ****

1/2 cup stevia

**** or just 3/4 cup stevia

For the glaze 

1/4 cup non-fat plain greek yogurt

1/2 scoop vanilla whey protein

1 1/2 teaspoon ground cinnamon

1/4 cup stevia

Directions

1)  Preheat oven to 350 degrees F.

2) Prepare baking sheets.

3) Sift together flour, baking soda, baking powder and cinnamon and set aside.

4) In a large bowl, combine together almond milk, egg, xylitol/stevia and vanilla.  Add in flour mixture and mix well.

5) Fold in raisins, carrots, walnuts into mixture.

6) Drop batter by the tablespoon about 1.5/2 inches apart from each other on your baking sheet.

7) Bake for about 11-13 minutes until slightly browned.

8) Remove. Set aside to cool.

9) Make the glaze: Combine all the ingredients together in a small bowl and mix well until incorporated.  Side note: I actually love using stevia for glazes and such because it actually has the consistency of confectioners sugar. WIN.

10) Top each cookie with some glaze.

11) Share and Enjoy!

Just yum.  Who said clean baking was boring? 😉
